Therefore, we propose the use of liquid nitrogen freezers. The advantage is that it can process on the production line, allowing for residual heat removal without manual intervention. The internal temperature can be set from room temperature to minus 120°C, making it suitable for various ingredients. Furthermore, while frost accumulates in electric freezers and reduces cooling capacity, in the case of liquid nitrogen freezers, the frost is expelled outside the freezer along with the exhaust nitrogen, so the cooling capacity does not decrease even after prolonged use.
