We would like to introduce a case study of the implementation of a zero-degree freezing machine for customers handling firefly squid. Outside of the production area, it is rare to see anything other than boiled firefly squid, making it possible to commercialize it for consumption raw. Due to issues such as parasites and the rapid deterioration of the product, it has not been possible to ship it nationwide. By freezing, we can reduce the risk of anisakis. Additionally, freezing the ingredients in good condition allows us to add value.
