Defrosting shirasu! Introducing a case that improved the "waste" of ingredients and time.
At Takahashi Shoten, we originally thawed shirasu in a refrigerator set to 0°C. While I don't think the thawing environment was bad, the quality remained unstable throughout the year, resulting in a yield loss of 10-15%. Therefore, during the thawing demonstration of shirasu before the introduction, the quality after thawing was surprisingly good, leading to the decision to introduce the DEPAK thawing freezer. Since its introduction, all stress related to the thawing process has disappeared, the quality has significantly improved, and the thawing time has been shortened, thus enhancing work efficiency.
