Excellent non-stick properties and heat resistance. Reduces release oil, improves work efficiency, and dramatically simplifies the cleaning and maintenance of madeleine molds!
The issues of "dough sticking" and "poor mold release" leading to product shape defects in the manufacturing process of Western-style confections and food products are significant challenges that reduce production efficiency and yield. This time, we introduce an example of a metal madeleine mold with a complex shell shape (scallop shape) that has been uniformly coated with a fluororesin (PTFE) to ensure consistent film thickness down to the details. ■ Top-notch non-stick properties (release properties) Thoroughly prevents dough from sticking and burning. The baked madeleines easily and cleanly release from the mold, significantly reducing the deformation of delicate products and directly contributing to improved yield in production environments. ■ Heat resistance (continuous use temperature 260°C) The coating is resistant to degradation even under the harsh thermal conditions during baking, maintaining excellent release performance over a long period. ■ Reduction of release oil and prolongation of mold lifespan By eliminating or minimizing the application process of release oils (butter or oil) that were previously essential, we can cut raw material costs and reduce the time spent on application. This strongly supports the streamlining and automation of manufacturing lines. Additionally, it protects the surface of the mold, preventing wear and corrosion of the base materials such as aluminum and steel, thus contributing to the longevity of the tooling.

basic information
【Coating Type】 Fluororesin Coating (PTFE: Polytetrafluoroethylene) 【Main Functional Characteristics】 ■ Top-notch non-stick properties (prevents sticking even with high-viscosity and high-sugar dough due to excellent release properties) ■ Excellent heat resistance (continuous use temperature of 260°C, fully compatible with baking processes for pastries) ■ Uniform application technology (precise coating control that follows the unevenness of complex three-dimensional shapes such as shell grooves and edges of madeleine molds) ■ Food safety (can be safely introduced for applications that come into direct contact with food) 【Compatible Base Materials】 Compatible with various metal molds such as steel, stainless steel, aluminum, and copper alloys 【Supported Processes】 Flexibly accommodates everything from prototype sample application to bulk processing for mass production *If you provide the desired mold size, shape, and current issues (such as wanting to reduce release oil or susceptibility to rust), we will propose the optimal film thickness and process. We also welcome inquiries regarding maintenance for peeling and re-coating if existing coatings have deteriorated.

Applications/Examples of results
【Main Applications】 ■ Molds for Western confectionery production (madeleine molds, financier molds, canelé molds, cake and muffin molds, etc.) ■ Baking sheets and bread molds for baking ■ Hoppers, chutes, conveyor guides, and packaging machine seal bars in food processing lines (measures against food adhesion and stickiness) 【Implementation Results and Improvement Examples】 ■ PTFE coating was applied to metal madeleine molds in the automatic baking line of a major confectionery manufacturer. ・Challenges before implementation: High-sugar dough adhered to the details of the molds, worsening the release of baked goods from the molds. Frequent product defects due to sticking (mold collapse) led to waste losses (decreased yield) being a significant issue. Additionally, the labor required for mold cleaning was high, reducing line operating rates. ・Effects after implementation: The overwhelming non-stick properties of the coating minimized the amount of release oil used while dramatically improving the release of baked goods from the molds after baking. The product defect rate was significantly reduced, achieving improved yield. Furthermore, the cleaning process after use was simplified to the point where it could be easily washed off with water, resulting in a reduction in cleaning and maintenance labor (cutting labor costs and utility expenses) and simultaneously achieving a longer lifespan for the molds.

Nikken Coating Industry Co., Ltd. has been a specialized manufacturer of functional coatings for contract processing, earning the trust of customers across various industries for 79 years since its founding. We leverage our processing technology to maximize the properties of fluororesins, such as non-stick, lubricity, and chemical resistance, providing high-performance coatings that directly address customer challenges, including "Thermo Pro Release" for thermal welding processes and "NonStick STC" for blades and precision molds. In recent years, in response to movements regarding regulations on fluorinated compounds (PFAS), "PEEK resin," which is gaining attention as a substitute for fluororesins, has become a focus. Nikken Coating Industry commercialized the world's first PEEK resin coating, "PEEKCOAT," in 1999. Based on the solid knowledge and know-how accumulated over more than 20 years, we are further intensifying our research and development efforts to explore the potential of next-generation PEEK coatings! We aim to be recognized as "the go-to for PEEK coatings" and will continue to lead the way. As "the best partner for functional coatings that builds trust through technology," Nikken Coating Industry will continue to contribute to the creation of high-quality, high-performance products.
