The main coloring component is polyflavonoid glycosides, and the product is provided as a brown powder that easily dissolves in water and ethanol solutions. Its characteristics include being odorless, hygroscopic, having excellent coloring power, and high light and heat resistance. It exhibits a chocolate color at a pH of 4.0 or higher, and the color tone is stable. Being of natural origin, it can be safely used in applications such as food, beverages, confections, and pharmaceuticals.
