At Maltasugiyo Co., Ltd., we switched to partial brine thawing because the thawing machine we had been using for many years developed a malfunction. However, since the volume of thawing was large, it was necessary to mix it occasionally to avoid uneven thawing, which meant coming to work early in the morning and monitoring the thawing process closely. Therefore, we decided to introduce our thawing machine, as it seemed to offer good thawing quality and usability. After the introduction, the burden of running water thawing was eliminated, significantly improving work efficiency. Additionally, we were able to thaw the product without it falling apart, keeping it looking nice.
