We would like to introduce the effects of Jerusalem artichoke extract on the alleviation of allergy symptoms. Using a pollen allergy model mouse, we compared groups that consumed tuber extract with those that did not. The results of our examination of "scratching frequency" and "serum IgE concentration," which is a cause of pollen allergies, revealed that the tuber extract significantly alleviates allergy symptoms. Additionally, we confirmed similar effects on allergy symptoms with extracts from the leaves of the Jerusalem artichoke. We are also identifying the active components that suppress allergy symptoms.
