Polylysine is a polyamino acid used as a food preservative. By adding it to bread dough, it suppresses freezing damage in frozen bread dough, resulting in a fluffy bake.

ε-polylysine (hereinafter referred to as Polylysine) is a homopolymer consisting of 25 to 35 units of the amino acid L-lysine, where the amino group at the ε position and the carboxyl group at the α position are linked by amide bonds. It has over 30 years of manufacturing history and is widely used as a food preservative derived from amino acids. Bread making involves many processes, but if the dough can be frozen after shaping, it allows for the omission of steps prior to secondary fermentation, significantly reducing the time required for thawing, fermentation, and baking. However, freezing the dough can lead to the destruction of yeast cells and damage to the dough structure due to ice crystal formation, resulting in a decrease in volume. This volume reduction is one of the freezing injuries of bread dough. Polylysine is a safe fermented food that has been used as a preservative for many years and has the function of suppressing freezing injuries in bread. Streptococcus pneumoniae is one of the major pathogens causing high levels of morbidity and mortality from pneumonia worldwide, particularly in children and the elderly. Pneumococcal vaccines based on the capsular polysaccharide (CPS), one of the most important virulence factors, are used to prevent these infections. Polycations derived from amino acids that can be used in food preservatives, hygiene materials, and daily necessities. JNC's "Polylysine" has obtained GRAS certification.

Polylysine is widely used as a food additive and, thanks to its GRAS certification (Note) from the U.S. FDA, is recognized as a global standard food preservative. As of August 2, 2022, the only polylysine with FDA GRAS certification is the polylysine produced by JNC Corporation. Polylysine is a naturally occurring amino acid-derived substance produced by microbial fermentation, similar to miso, soy sauce, yogurt, and other products. Polylysine ionically adsorbs to microorganisms, inhibiting their growth. Additionally, it has been reported that using dispersants allows for antibacterial effects to be achieved with a smaller amount of Polylysine added. We introduce the antibacterial effect against E. coli of polypropylene sheets blended with Polylysine. Polypropylene sheets with added Polylysine showed antibacterial effects against E. coli. By uniformly dispersing Polylysine in aqueous emulsion resin, an antibacterial paint can be obtained that has low environmental impact from volatile organic compounds (VOCs) and high safety for human health. This introduces the antibacterial effects against Escherichia coli, Staphylococcus aureus, and Bacillus subtilis of polypropylene sheets coated with polyvinyl butyral resin dispersed with Polylysine. Since 1989, it has over 30 years of manufacturing history and is widely used as a food preservative amino acid. Chelating agents are commonly used in food, cosmetics, various cleaning agents, chemicals, and pharmaceuticals as metal ion sequestrants and antioxidants. It is well known that chelating agents such as EDTA and sodium citrate exhibit antibacterial properties and have been used for antibacterial purposes for a long time. We present the minimum inhibitory concentration (MIC) against Escherichia coli and Staphylococcus aureus when using Polylysine in combination with EDTA.
