Turmeric (also known as Curcuma, Ukkon, or Kunyit) is a perennial herb belonging to the ginger family, Zingiberaceae. Its scientific name is Curcuma longa (syn. C. domestica). The English name is turmeric. It is native to South and Southeast Asia. The Indonesian and Malay name Kunyit (often pluralized in English as Kunyits) is also well-known in Japan. This is the dried rhizome of Kunyit turmeric, which has a curcumin content that exceeds that of autumn turmeric produced in Japan. The curcumin content of Indonesian Kunyit turmeric is about five times that of Okinawan turmeric. Tropical plants originating from tropical countries are ideally suited to their native environments. Moisture content is below 10%. It can be used as a powdered ingredient within Japan or directly in cooking.

Indonesian native pepper. Scientific name: Zanthoxylum acanthopodium DC Common name: Andalimaan pepper A type of pepper that is native to a small part of Sumatra, Indonesia. It is slightly smaller than Japanese pepper. Indonesian pepper has a unique umami added to the aroma similar to Japanese Asakura pepper, characterized by a complex scent with depth and richness. It can be described as delicious pepper. In contrast, the inexpensive Chinese pepper imported to Japan has a simple aroma with strong acidity and spiciness, used primarily in Sichuan cuisine, making it significantly different from Andalimaan pepper. It is offered in whole form with only the skin, with branches and seeds removed, for food use. It is naturally cultivated, and pesticide residues are negative.

Its origins are in Indonesia and the Indian subcontinent, and it began to be cultivated in South America during the colonial era. The shapes of Indian and Indonesian cardamom differ; the Indian variety is smaller and is called "shōzuku." On the other hand, the Indonesian Java cardamom has large, white, round pods, known in Japan as "byakuzuku." Inside the pods are numerous black seeds, which consist of various aromas that are not easily distinguishable, and the refreshing taste, reminiscent of mint, captivates people around the world.

It is a turmeric species unique to Indonesia. Scientific name: Curcuma xanthorrhiza. Common name: Kusuriukon. The tribes that migrated to the 2,000-meter highlands lived nearly naked in the cold and subsisted on plant-based foods, but the secret to their prosperity was the rare plant found only in Papua Island, the red fruit Bua Mera.
